Scones for the Kiwi

Thanks to Sezrah, this is what you are getting from me today.

We have been discussing the many and varied forms of what we call biscuits, cookies,dumplings,scones,bikkies etc. Confusion reigns supreme, but it's all delicious confusion. So here,in all it's glory is my recipe for Scones. We might graduate to biscuits later. That's where the confusion really begins.... :-)


Scones According to Yetzirah:


2 cups whole wheat pastry flour
2 cups unbleached flour
2 teasoon. soda
2 teaspoon. cream of tartar
1 teaspoon. salt
1 teaspoon. cinnamon

¼ cup melted butter
1/3 cup honey
2 cups buttermilk

(1 cup equals 8 oz.)

You can add 1 cup of one of the following: raisins, dried cherries, dried cranberries, chocolate chips, chopped apple, fresh berries or some other fruit cut up in smallish pieces.

Stir together dry ingredients. In a separate bowl, stir together the wet ones. Now pour the wet into the dry and stir with a fork…. Not too much. It will be kind of wet Put a fair handful of flour on the counter and pour the dough out onto it. Gently start to work the dough into a circular shape….fold and turn a bit like bread dough but with a light hand. It will be messy and sticky. Don’t be afraid, you are the boss ! Practice will help.
Pat out your circle 3/4 of an inch thick. Cut them into about 12 wedges and place on a greased cookie sheet.
Have your oven pre-heated to 425. Bake for 15 to 20 minutes. Eat them hot. Or let cool and store in a plastic bag.
They freeze well and warm up in the microwave pretty well.

    well i've managed to find an online nz scone recipe as my cookbooks etc are at home and i'm here at work :)

    ok, i've had another read of your comment and our dumplings sounds the same as yours as they're dropped into a casserole and cooked
    your biscuits are our scones except they're either sweet or savoury, and we don't put gravy anywhere *near* them, ewwwwwww
    our biscuits or bikkies are your cookies :)

    Mmmm. Gotta try that once the weather cools. I'm not about to turn the oven on yet!!

    I'll give Harry back to you on Thursday, unless you're going to be at the bbq on Wednesday.

    Mmmm sounds yummy do you have a recipe version that you can make in an EZ Bake oven? Damn my lack of culinary ability.
