It Must Be Autumn

This is about one half of the apple harvest from our little Fugi tree in the front yard. I kinda wish I had a cider press today. I have eaten my fill of fresh apples and made a batch of sauce. Now what I would really love is an ice cold glass of cider.... Alas. I will have to make a run to Apple Hill for such a treat. In the meantime, I will have to think of something to do with this gaggle of apples.

    You make the best apple butter I've ever tasted, too! Yummy!

    Maybe I'll Google your recipe and make some of my own soon. After all, I got a peeler, slicer, corer gadget last year. That should make pretty short work of preparing the apples.

    We make cider, using a juicer to extract the juice. It works really well - and makes lovely cider.

    Years ago my Aunt Jean gave me this recipe for Fresh Apple Cake.

    It is not low cal.
    It is not low carb.
    It is not low fat.

    It is easy.
    It is sweet.
    It is alarmingly addictive.

    Fresh Apple Cake

    Toss together:
    4 cups fresh sliced apples
    2 cups sugar

    Mix well and add to the apple mixture:
    1/2 cup salad oil
    1 cup chopped walnuts (optional)
    2 eggs, well beaten
    2 teaspoons vanilla

    Mix dry ingredients and add to above mixture:
    2 cups flour
    2 teaspoons cinnamon
    1 teaspoon salt

    Pour into a lightly greased 9 x 13 baking dish pan and bake at 350 degrees for 1 hour.

    Serve warm or cold.

    Resist all temptations to cut crooked pieces hoping you can straighten it up during the day. This can lead to consuming an entire cake in one day.

    Trust me on this.
