I reckon that I have discovered a universal Panacea for evil.

What we need to do is get every household on the entire planet to cook up a nice pot of apple butter.

You can't yell at your kids when apple butter is simmering in the kitchen. The very aroma calms the psyche. How can you have an argument with your spouse when the certitude of apple butter consumption approaches with every passing hour? Hell, I don't think even Osama bin Laden could plot his next atrocity if he had apple butter bubbling in a pot nearby. The spicy sweet nuances would permeate his brain and make him want to jar some up and pack it off to his neighbors as a house warming gift. I'll bet he would even be so inspired by the magic of apple butter, he would put on his best apron for the occasion. (You know, the pink one with the poodles on it...) And I have a feeling that a nice spoonful of the stuff spread on a crusty toasted English muffin might tempt the terrorists in Falujah to come on out of their mosques/armories for teatime.

So come on, let's give it a try. Here's what you do:


Apple Butter To Fix The World

Fill your crock pot with thinly sliced peeled apples.
( I used 4 different kinds of apples. I think this helps give a more complex flavor)I think I used about 10 or 12 apples.

Turn it on HIGH

Stir in :

2 cups of sugar
1 teaspoon cinnamon
1/2 teaspoon cloves
1/4 teaspoon salt
2 Tablespoons of apple cider vinegar

Put on the lid.

Go read a book, work a puzzle, admire your garden, watch the movie "50 First Dates",write in your diary, or visit your neighbor for a couple of hours.

Come back and stir your apple butter.

Repeat most of the day.

You can turn it on low if you are going to be away a long time.

When it has cooked down to about half of what you started with, and has turned a nice spicy brown color and is about as thick as you want it, take the lid off and let some more moisture escape for an hour or so. Stir it until it's nice and smooth, but don't get worked up about it, texture is good too.

If it's not as spicy as you like, add some spice. If it needs sugar, add some sugar.
This is no time to be exercise parsimony.

Take a spoonful and find someone else in the house to surprise with a taste. They will thank you. They may kiss you. They may do other nice things too, be open to the possibilities.

Pour your Magic Apple Butter into jars, can it or freeze it or put it in the fridge.

Share some with a friend. Or if you are new to this Apple Butter thing like Osama, share some with an enemy.

    I'm anticipating making applesauce and apple butter next week after my calc class has finished and I know whether or not I need to take it again (sinking feeling in my stomach giving a positive answer to that question). I think I will definitely try your recipe!

    mMM ..I bet your apple butter would be yummy eaten on a snowy day while cocooning in front of the fire and gazing out at the white fluffy stuff we get so much of here .

    Oh yummmmmm - what a GREAT recipe! And I've just started using my crockpot again. I love whole grain toast with apple butter. Good, and healthy too!
