Adventures In Vegetables

So.....

We got our first delivery of fruit and vegetables from the farm. Delivered in the wee hours to my front door. Like contraband.

I didn't take a picture this time because I got up with Hub Man VERY early and unpacked it. I was not fully awake at the time.

There were apples, pears and grapes.
Chard, Rapini, Napa Cabbage, Kale, and Fennel.
Brussels Sprouts! and two small winter squashes.

Everything was in great shape. I have never eaten Kale or Fennel or Rapini.

Well, at least not until day before yesterday. I looked on the internet for a recipe for Kale and came across this...

You wash off your Kale (I used half a bunch) and let it dry. Really dry is good. Cut the rib out of it and cut the leaves into bite sized pieces. Toss in a bowl with a tablespoon of olive oil. Lay the pieces out on a foil lined cookie sheet. Sprinkle with salt. [Next time I'm trying lemon pepper too....] Then bake it in a 350 degree oven for 12 minutes.

You won't believe me, but the Kale gets crispy. It's crispy and salty.
Krispy Kale, that's what I'm calling it from now on. It's really good!


I'm adding the rest of it to some Potato Leek soup today. Kale tastes like broccoli to me. I love broccoli.

I'm drying the apples that came in the box, as we really like dried apples, and can't seem to get enough of them lately.
The pears are all mine.

In other words, I love my organic produce! I'm really glad I found out about the farm. It's only about an hour from here. One day I may go visit.

Fiona and Pal have arrived at a stand off. Fiona stays up and out of Pal's way. And Pal pretty much leaves her alone as long as he doesn't have a prayer of getting to her. They keep an eye on each other. Let's put it that way.

Fiona has chosen some interesting places to stay out of reach.

Places I am not sure I approve of.....

    Kitten has never slept in the crockpot, but that's probably only because I keep the lid inverted on the top. Still, what do you expect when you bring a hostile "wolf" into the pride?

    haha Smart kitty! I've never had fennel. I've heard it tastes a bit like licorice? I can't wait to hear how you fix it and if you like it or not. Hugs, Summer

    Slow roasted cat... with kale?

    My favorite kale recipe is the Zupa Toscana recipe from the Olive Garden. We always quadruple the recipe and with the twins it actually lasts more than one meal that way! I've got a lowfat version of it somewhere if you're interested.

    I've never heard of Rapini, what is it?

    What are your plans for the chard? Pickle it?

    Now I'm hungry.

    Turkey sausage, does that count?

    • 1 lb ground turkey sausage
    • 1½ tsp crushed red peppers
    • 1 large diced white onion
    • 2 tsp garlic puree
    • 10 cups water
    • 5 cubes of chicken bouillon
    • 1 cup fat-free cream
    • 1 lb sliced Russet potatoes, or about 3 large potatoes, or 6 red potatoes
    • ¼ of a bunch of kale
    1. Sautee sausage and crushed red pepper in pot. Drain excess fat, refrigerate while you prepare other ingredients.
    2. In the same pan, sautee onions and garlic for approximately 15 minutes. or until the onions are soft.
    3. Mix together the chicken bouillon and water, then add it to the onions and garlic. Cook until boiling.
    4. Add potatoes and cook until soft, about half an hour.
    5. Add fat-free cream and cook until thoroughly heated.
    6. Stir in the sausage.
    7. Add kale just before serving. Delicious!

    I hate to admit it, but I have not tried some of these veggies simply because they intimidate me. I am not an adventuresome cook. The Krispy kale sounds kind of fun though. Maybe I will have to find my courage and take a risk on something new.

    I'm going to try that kale bake recipe.

    Leave it to a cat to find a resting place. If I can ever find my camera, I'll take a pic of Missy in her favorite place: the bathroom sink. She's very reluctant to leave -- until I turn on the water.
