    Okay here ya go… my original recipe. It's  called  Suzie's Three Seed Bread in honor of a friend who loves lots of inclusions in her bread.   1 cup warm water 1 cup warm milk 1 tablespoon dry yeast 1/4 cup molasses 1/4 cup honey 2 tablespoons vegetable oil 1 cup rolled oats 1/2 cup gluten flour… also called vital wheat gluten 2 teaspoons salt 4-5 cups whole wheat flour 1 cup raw pumpkin seeds 1 cup raw sunflower seeds * Sesame seeds for the tops of the loaves Make up your dough, being careful not to add too much flour. The bread will become way too dense if you do. So try to keep the kneading flour to a minimum. The dough should still be rather 'tacky' or sticky when you put it in a bowl to rise. Let the dough rise in a warm place for about an hour, Form into three round loaves using some oil on your board if need be to avoid adding more flour. Roll the top of the loaf in sesame seeds and slash the tops with a sharp knife. Let rise again for about 30 to 45 minutes. Bake at 350 degrees for 40 - 45 minutes or until it sounds hollow when you thump it. Be prepared to feel virtuous when you eat this bread.     oh, thanks so much! It will be the fall though I think until I try this -- we are up at 7250 feet for a month and altitude and bread making do take some practice. When I do bake up here I am usually fine -- someone gave me a copy of a Colorado extension high altitude baking booklet and it has worked for me. What's your altitude, btw?
