Good Soup

There are many famous stories of food dishes that were created because the cook didn't have this or that on hand, or found themselves with an odd assortment of ingredients in the kitchen, and a pack of hungry people waiting in the parlor. Well, minus the pack of hungry people, that's what happened to me yesterday. I wanted soup. I went to the pantry. I looked around the kitchen. I put some stuff in the pot, and magic happened. DSC04247 Here's what you do: Chop up an onion and cook it in some olive oil and butter till it starts to get a little brown. Add a nice teaspoon of minced garlic. [I used the kind that comes in a jar.] Throw in two 15 ounce cans of diced tomatoes and two cans of water. You can also add some broth powder of some sort or a couple of bullion cubes of your choice. I added some mixed herbs at this point. Ms. Dash something or another. Put in your favorites. Bring this to a boil. Add one huge or two ordinary carrots, diced. Cook for 15 minutes at a pretty good clip. Add one orange sweet potato peeled and chopped. Don't question the sweet potato. Just do it. Cook another 15 minutes. Add a rinsed 15 ounce can of black beans. Cook for another 5 or 10 minutes.   Prepare to be amazed.   You're welcome. :-)   lime wild
