Okay, so here is Hub Man's Onion Pie recipe, with a slight variation by me.
You slice yourself up about three big onions. Any kind will do. Saute' them in some olive oil or butter or both very slowly until they are mostly cooked through. 20 min., half hour?
Then you beat up about 3 or 4 eggs with a half cup of milk. Put in some salt and pepper to taste.
Grate a cup and a half of cheese of your choice.
Layer the onions and cheese into an uncooked pie shell, OR try what I am going to try today... Oil your baking dish or pie pan and arrange thin slices of raw potato on the bottom for the crust instead.
Pour the milk and eggs over the onions and cheese.
You can top the pie with crushed corn flakes drizzled with a little butter if you want to.
Bake the whole thing in a 375 degree oven until the eggs are set.
45 min.?
Let it set a little while to cool before cutting into it.
