Onion Pie a la Hub Man

Okay, so here is Hub Man's Onion Pie recipe, with a slight variation by me.

You slice yourself up about three big onions. Any kind will do. Saute' them in some olive oil or butter or both very slowly until they are mostly cooked through. 20 min., half hour?

Then you beat up about 3 or 4 eggs with a half cup of milk. Put in some salt and pepper to taste.

Grate a cup and a half of cheese of your choice.

Layer the onions and cheese into an uncooked pie shell, OR try what I am going to try today... Oil your baking dish or pie pan and arrange thin slices of raw potato on the bottom for the crust instead.

Pour the milk and eggs over the onions and cheese.

You can top the pie with crushed corn flakes drizzled with a little butter if you want to.

Bake the whole thing in a 375 degree oven until the eggs are set.

45 min.?


Let it set a little while to cool before cutting into it.


The recipe is kinda vague, because it's a guy recipe. That's all I can tell you. I got this one by watching Hub Man make it.

But it's yummy. That's a fact.

    Yep sounds like kind of thing I would try, now and then us guys will come up with a good camp style dish. I think I will have Daisy give it a go.

    So it is very much like a quiche without the fancy pan. The potato crust sounds like a nice variation; onions and potatoes always go well together. Be sure to let us know how that works out. :)
