The delivery guy just came with all my bounty. He was a new guy. I like him. He gave me the wrong box and came back to exchange it, but I like him anyway.
I am going to make Krispy Kale with that bunch of kale in the lower right hand corner. I think I have mentioned it before, but I'm telling you, it's one of my favorite things now.
Wash a bunch of kale.
Let it dry off.
Cut the center stem out of the whole length of the leaves.
Cut into pieces, medium sized.
Put them in a bowl and drizzle a very modest amount of olive oil and toss to coat.
It doesn't take much.
One Tablespoon should be plenty.
Spread the leaves out on a baking sheet covered with parchment paper.
Sprinkle kosher salt on them.
[Really use kosher salt. It is too easy to salt too much with regular table salt because it's so fine.]
Bake at about 375 for 10 minutes or so.
Might have to go 12. Depends on your oven.
Don't let them get brown or anything.
When they are crispy, take them out.
They are delicious.
The healthiest 'potato chips' you have ever eaten.
Okay, I have to go now, I have a date with a bunch of kale.
