Roast Lunch

I realize that blogging about one's lunch is actually pretty lame.

But on the other hand, it's something we all do...

Eat lunch I mean.

In one form or another.

Most times lunch is pretty.... mundane.

Once in a while however there comes along a lunch that catches more than one's fork and stomach.

Sometimes lunch catches one's eye.

Today was such a day.

I put it down to the foggy weather. It has made for some very nice light in my kitchen around lunchtime.

I had quite a few vegetables in the fridge that really needed to be eaten up. And because I am an incredibly lazy cook, I decided to throw them all together and roast them.

This was the result:

Vegetables, olive oil, salt, pepper, and heat.

Perfection.

    I must say I have never thought to roast brussel sprouts... must try this when we can finally get fresh vegies again!

    Thumbs up for the brussel sprouts. I always roast them now, so much more yummy than boiled.

    That is a beautiful, nutritious lunch.

    Beautiful...a work of art...I would gladly hang this "painting" in my kitchen with the beautiful purples and the translucent onions to compliment the greens and all...and also edible. Now I'm hungry, oh my :)

    People! What's wrong here? Am I the only one who thinks Brussel sprouts leaves an aftertaste akin to unwashed sneakers?

    OK, akin to what I *think* unwashed sneakers would taste like, if I actually tasted them. I can't say I've ever actually tried unwashed sneakers.
